Soldier is a pre-1800 dry bush bean, particularly popular in New England. My friend Caroline, who lived in New York, swore these make the best baked beans.The reddish-tan eye is said to resemble a uniformed soldier, Widely adaptable, midseason, 90-95 days to dry beans.
